Unique and tasty
Fried Lobster is a unique dish popular in the south. If you've never tasted fried lobster, give it a try. Gather some friends, fill the coolers and turn up the music. And have a great weekend!
Serves 6
Ingredients
15 Florida lobster tails (shells removed)
3 cups Gold Medal Wondra Quick Mixing Flour or sifted flour
6 tablespoons Everglades Seasoning
6 tablespoons Everglades Heat Seasoning
Sea salt and fresh ground pepper to taste
Canola or vegetable oil for frying
Directions
Cut tails lengthwise in half. Kitchen shears work well. Slice each half into 4-5 chunks, depending on the size of the tail. Set aside.
Combine Wondra, Everglades seasonings, salt and pepper. Add lobster pieces and toss. Chill 30 minutes.
Pour 3-4 inches of oil into a large saucepan or Dutch oven. Heat on high to 375 degrees or until oil begins to pop. Reduce to medium and add 10-15 lobster pieces at a time. Turn often with slotted spoon 4-5 minutes until golden brown. Remove, insert toothpicks and serve immediately. Continue cooking in batches. Makes about 10-servings.
Optional skewer method: After slicing each tail lengthwise in half, insert skewer down the middle of each piece and proceed. These will cook in 4-5 minutes.
